Happy Memorial Day, y’all! The Boy and I love to celebrate holidays, and by “The Boy and I” I really mean I love to celebrate holidays, and The Boy just typically goes along with it. In my opinion favorite recipes (read: this recipe for pimento cheese spread), need to be a part of every holiday celebration.
To celebrate Memorial Day, The Boy and I will be taking a picnic to go fishing, and I’m planning a fantastically southern meal. Naturally, when I use the description, “fantastically southern,” Pimento Cheese Spread is included. It’s so delightfully wonderful and not at all good for you.
I have this theory that crackers were developed solely for pimento cheese spread, and my Southern Pimento Cheese Spread tops them perfectly. But, don’t limit yourself simply to crackers! This dip is great on almost anything. I’ve used the leftovers on toast with tomatoes (or when I’m feeling frisky, fried green tomatoes) or bacon, in Mac and Cheese, or as grilled cheese. But, can you imagine it on a cheese burger? Or a salad? The sky is the limit.
This is a hand me down recipe from my mom, but it’s pretty much the classic version of pimento cheese. If you want to make something even easier and yummy in a different way, omit the spices and hot sauce and replace them with a pack of Hidden Valley Ranch Seasoning. All you do is mix the ingredients (minus the pimentos and shredded cheese) with the ranch packet until everything is smooth, and then fold in the cheese and pimentos. Let it chill a bit and it’s ready to go.
Another great variation is to change the type of cheese used. Pepper Jack would be excellent. Maybe add some bacon or fresh spring peas and you’ll get that same wonderfully comforting flavor with some interesting twists. Comment below if you have another variation that you love.

Southern Pimento Cheese SpreadCourse: Appetizers
Southern Pimento Cheese Spread is the perfect summer snack. It is a hit on every party’s table, in every picnic basket, and is surprisingly versatile. How will you use it?
3 cups shredded sharp cheddar cheese (I used finely grated, but any grate will work)
1 cup shredded Monterey Jack Cheese
1/2 cup mayonnaise
4 oz jar of pimentos (and juice)
pinch of cayenne pepper
3 shakes of hot sauce
1/2 teaspoon garlic powder
salt and pepper to taste
- If needed, shred the cheese and set aside.
- In a large bowl, combine mayo, pimentos (juice and all), cayenne pepper, hot sauce, salt and pepper.
- Toss in the cheese and stir until everything is combined.
- Cover and let chill in the fridge for AT LEAST 2 hours.Serve it over crackers, or on toast, or grill it like grilled cheese and fall in love with Pimento Cheese Spread.
- Garnish with chopped chives or green onions.
